CHOC COCONUT BOUNTY SLICE
Ingredients:
▪︎ 1/4 cup maple syrup
▪︎ 1.5 cups raw hazelnuts
▪︎ 2 TBS coconut oil
▪︎ ¼ cup raw cacao powder
▪︎ Pinch of salt

Bounty Base
▪︎ 2.5 cups desiccated coconut
▪︎ 1/3 cup maple syrup
▪︎ 1 tsp vanilla essence
▪︎ 3 TBS melted coconut oil
▪︎ ½ cup coconut milk or cream (refrigerated overnight/thick part of the can)

Topping:
▪︎ 150g vegan milk or dark chocolate
▪︎ ¼ cup coconut cream (refrigerated overnight/thick part of the can)


Method:

1. Add your hazelnuts to a food processor and blitz until finely chopped. Add the remaining ingredients and blend again until the mixture sticks together. Press into the base of a lined loaf tin lined with baking powder. Set aside.⠀

2. For your coconut layer, add all your ingredients to a bowl and mix well to combine. Scoop over your base and set in the fridge.

3. Roughly chop up your chocolate and set aside in a bowl. Heat your coconut cream (until hot, but not boiling point) and then pour over your chocolate and whisk together until smooth and glossy. Pour your chocolate ganache over your coconut layer, spreading evenly and then set in the fridge for 2 hours until set.

4. Remove from the fridge and slice into bars, enjoy!
