HEALTHIER PROTEIN CARAMELS

Move over Cadbury favourites as these healthier protein caramels give the ultimate chocolate box feels and you won’t believe they are completely refined sugar free, vegan and packed with protein! Finally some healthier caramels which I cannot get enough of!

HEALTHIER PROTEIN CARAMELS

Cooking Time: 1 hour   /    Setting: 3 hours   /    Makes 15

Ingredients:
• 1.5 TBS almond butter
• 1/2 tsp vanilla essence & ¼ tsp salt
• 1 cup dates (approx 15)
• ¼ cup @macr0mike salted caramel protein (Discount AMB-SAMMYB)
• 2 tbs coconut oil (melted)
• 2 tbs almond meal
• 2 tbs warm water

COATING:
150g vegan chocolate

Method:
1. Soak your dates in warm water for 15 minutes to soften, remove pits and add to your food processor along with your remaining ingredients and blend until the mixture forms a sticky dough.

2. Place your mixture onto a square sheet of baking paper and place another sheet on top, flatten down and shape your mixture into a square. It should be about 1-1.5 cm thick. You could also use a lined loaf tray and spread the mixture evenly along the pan.

3. Freeze your mixture for 3 hours until firm. Once your mixture has hardened, remove from the freezer and slice with a sharp knife into small squares (mine made about 15). Line a rectangle tray with baking paper.

4. Melt your chocolate in 30 second intervals in a microwave safe bowl until fully melted and working one by one, dip your caramels into the chocolate and allow the chocolate to drip slightly using a fork. Transfer immediately to a lined baking tray to set. Once you have coated all your caramels, allow to set in the fridge for 30 minutes or until the chocolate has set. Sprinkle with sea salt flakes and enjoy straight away
