HEALTHIER COOKIE DOUGH
You won’t believe this cookie dough is hidden with chickpeas as it still tastes just as good as traditional cookie dough!
Packed with protein, healthy fats and low on refined sugar, this healthy cookie dough is one of my favourite desserts to enjoy after work.
HEALTHIER VEGAN COOKIE DOUGH
Cooking Time: 30 minutes / Serves 2-3
Ingredients:
• 1 can chickpeas (rinsed and drained)
• 1/4 cup runny peanut butter
• 1/4 cup maple syrup
• 60g @macr0mike cookie dough protein (Discount AMB-SAMMYB)
• 1/4 cup blanched almond meal
• 1 tsp vanilla extract & a pinch of sea salt
• 1/3 cup vegan milk or dark chocolate chips
Method:
1. Add everything to a high-speed food processor (except for the chocolate chips) and blend until the mixture is very thick and a smooth consistency. Add a touch of almond milk if required to help blend the mixture
2. Add the chocolate chips and fold them through the mixture with a wooden spoon.
3. Top with your desired toppings and enjoy straight away!
