HEALTHIER VEGAN TWIX BARS
Looking for a guilt-free indulgence that satisfies your sweet tooth cravings? Look no further than my irresistible vegan twix bar recipe. And the best part? They are completely vegan, gluten-free and refined sugar-free!
Vegan, gluten-free, refined sugar-free
Cooking Time: 2 hours / Setting: 4 hours / Makes 6 bars
Ingredients:
Shortbread Layer
1 1/2 cups blanched almond meal
1/2 cup white chocolate @macr0mike protein powder (DISCOUNT - AMB-SAMMYB)
3 TBS melted and cooled coconut oil
2 TBS maple syrup
1/4 tsp salt
Twix Caramel Layer
1 &1/4 cup smooth natural peanut butter (I used @mmmore_treats salted caramel pb)
1/4 cup melted coconut oil
1/3 cup maple syrup
1 tsp vanilla extract
Pinch of salt
Coating:
• 220g vegan chocolate
Method:
1. Preheat your oven to 170C and grease and line a small 8x8 tin with baking paper. You could also use a loaf tin and use the baking paper to make a side wall at the end if the mixture doesn’t cover the entire base. Mix all your shortbread layer ingredients until the mixture resembles wet sand. Transfer the mixture to your tin and press down firmly with the back of a spoon or using your hands. Allow the mixture to cook in the oven for 10 minutes until lightly golden. Once golden, remove and set aside to cool.
2. For the Twix caramel layer, add all your ingredients to a medium mixing bowl and mix until it resembles a nice glossy/slightly runny caramel texture. Pour the mixture on top of your cooled shortbread base and place in the freezer to set for 1-2 hours.
3. Once set and firm to the touch, chop the mixture into 5-6 individual bars (depending on how big you want your Twix).
4. Melt your chocolate in a medium microwave-safe bowl until the chocolate is fully melted. Dip each Twix bar into your chocolate and transfer immediately to a lined baking tray with baking paper. Allow to set in the fridge for 30 minutes before serving. Enjoy!
